Meal Prepping

I’ll be honest – it has taken me a LONG time to get on the meal-prepping bandwagon. Why? I’ve never cared for leftovers because the texture of the food is different [at least it seems that way to me]. And I can be very picky about what I want to eat from day to day. But over the last several months, I decided to experiment.

The best part about meal prepping [in my opinion], is that there are days when I can come home from work, pop my food in the microwave, and be sitting down to dinner in less than 10 minutes. Plus, clean-up is a snap! [I really can’t believe it’s taken me this long to realize this. Duh!] And I have found that the texture of the foods I choose isn’t really all that different from day to day.

Here is this weekend’s meal prepping:

  1. On Saturday, I made butter herb salmon, with white cheddar pasta and green beans with almonds. I had enough for Saturday’s dinner plus one more – it’s sitting in the fridge to be enjoyed either Monday or Tuesday.
  2. Today, I made honey-mustard glazed ham steak with rice. This time, there was enough for tonight’s dinner plus 3 more meals.
  3. Overall, the ingredients for these 6 meals cost me about $17. Not too bad – especially when I compare it to a single meal at Taco Bell or a frozen pizza.

Now I don’t have to worry about what I’m eating for dinner until Friday! [And to be honest, there’s a 98% chance I will have pizza that night.]
